Spicy Southern Fried Chicken Wraps

I think I may eat too many wraps, and my boss would probably agree. We have an on-line deli ordering system and work; where you get to pick your bread, fillings, sauces and any extras, and then chose the time you would like to collect it; it pretty genius really! I will always order a wrap from this (which is why my boss thinks I am obsessed), but if I am honest they are usually quite touch and go. I will often be missing certain fillings, sometimes the Cajun chicken is mixed with mayo and sometimes it is dry and the most annoying thing about them is that often they have new people making them who just roll them up and therefore they just fall apart at your desk when you try to eat them. Now I am not saying I am a wrap expert , but I do have a lot of love and enthusiasm for them, and even when I have them most days at work I still regularly like to come home and cook them myself; mainly because they can be so versatile and taste totally different every time. This recipe combination was delicious and the chicken was 100 times better than KFC; if you don’t believe me you will have to just try it for yourself.

Serves 3

For the Southern Fried Chicken

–          1 ½ tbsp chopped coriander

–          Juice half lemon

–          1 green chilli – finely chopped

–          4 chicken goujons – cut into strips

–          2 tbsp plain flour

–          ½ tsp paprika

–          ½ tsp cayenne pepper

–          Salt and pepper

For the wrap

–          3 large tortilla wraps

–          Homemade salsa (check out my previous blog)

–          Homemade coleslaw – search my homemade coleslaw recipe

–          Grated cheese

–          Mixed leaves

Marinate the chicken in the coriander, lemon and chilli and leave in the fridge for half an hour

Mix together the flour, paprika, cayenne pepper and salt and pepper and coat the chicken in the mixture.

Leave in the fridge for another hour.

Heat a frying pan (or use a deep fat fryer if you have one), with about half an inch of oil to a high temperature and fry the chicken until golden crispy and cooked all the way through. You will need to turn half way through; I would suggest doing 2 minutes on each side and then testing to see if they need any longer, as it will depend on the thickness of your chicken strips to determine how long you will need to cook them for.

Lay out each wrap and top with the salsa, leaves, cheese, coleslaw and chicken.

Roll up and enjoy 😀

  2. This is a must try! My grown children somehow all love spicy food! I don’t know how that happemrd. Couple theories:
    -Its just me w/my sissified problem with spicy/hot.
    – Maybe bcuz I raised them with a garden full of rows of peppers/chilies (which included picking, stringing upside down. ..drying for thru-out the year. Including the likes of collecting/filling JARS of seeds (cayenne, pepperocini ) for cooking; sprinkling on homemade ppizza, etc……or
    – I cooked with them! (think my age oversensified my tastebuds?
    WHAT HAPPRNED?!
