Roasted Trout with Couscous Halloumi Salad, Roasted Tomatoes and a Basil Dressing

I have only ever cooked trout once before this occasion and after eating this dish I can’t understand why we haven’t eaten it more. Trout is massively underrated, and is often compared to salmon; but in my opinion trout is way better. It taste fresher, is fuller in flavour, more tender and is such a beautiful bright colour. We found a village in the Cotswolds a few years ago that was famous for trout and had a farm where you could fish for your own, after eating this dish I want to go back and fill my freezer with this deliciously beautiful rainbow fish!

Serves 2

For the Trout

  • 2 x trout fillets – approx 175g
  • Splash oilive oil
  • Salt and pepper
  • 2 x small vines of tomatoes

For the couscous salad

  • Splash olive oil
  • 1 courgette – finely chopped
  • 1 pepper – finely chopped
  • 1 red onion – finely chopped
  • 80g halloumi – cut into cm cubes
  • 2 cloves garlic – crushed
  • 100g cous cous
  • 1 vegetable stock cube
  • 2 tsp mint sauce

For the Dressing

  • Large handful basil
  • 3 dsp extra virgin olive oil
  • Juice 1 lemon
  • 3 dsp truffle oil
  • 3 dsp white wine vinegar
  • 1 dsp honey
  • 2 tsp vanilla yoghurt

Preheat the oven to 200’C

Rub the trout with salt pepper and oil and place on a baking sheet

Top with the tomatoes and then bake in the oven for around 12-15 minutes – depending on the size/chunkiness

While the fish is cooking, heat the oil in a large frying pan and fry the onion, pepper and courgette for 5-7 minutes until softened.

Add the halloumi and the garlic and then fry off for another 5 minutes.

In the meantime, place the dry couscous in a saucepan and sprinkle with the stock cube

Cook according to the pack instructions and then stir in the veg mix, mint sauce and season to taste

Finally whiz together the ingredients for the salad dressing and when the fish is cooked plate up and enjoy.

  2. I love the look of that dressing! Bet it would go amazing on its own just with the couscous! I’m gluten free and I can’t wait to make this whole recipe replacing the couscous with quinoa 🙂 Yum!!!
