The Slightly Better For you Fry-Up

OK, so it’s January and I would imagine a lot of you have New Year’s resolutions to be a little healthier, lose a bit of weight and generally eat better food. One thing that is difficult to give up is the glory and satisfaction of an uber meat-tastic fry up; but fear not my friends, I may have a solution! Firstly, get yourself a great non-stick frying fan, that way you will not need to use any cooking oil. Ask yourself, do I really need sausages, bacon and black pudding? The answer is ‘probably not’, so just pick one meat for your breakfast and then fill your pan with vegetables and eggs.  I chose to use spinach and tomatoes but maybe throw in a few mushrooms, asparagus or just anything that tickles your fancy. Also give this a try without toast; you will be surprised by how full you are!

Serves 1

–          2 good quality high % meat sausages

–          5 cherry tomatoes – halves

–          2 eggs

–          Large handful baby spinach

Heat the frying pan to a medium –high temperature and fry the sausages until golden brown all over. You will need to turn these from time to time.

Add the tomatoes, flat side down and fry for 2 minutes

Crack each egg and add it to the pan and once the while has started to turn white instead of clear then top place the spinach on top of the tomatoes.

Once the spinach has wilted and the whole of the egg white is cooked this is ready to serve.

  1. Great way to start the New Year – healthy frying! I love your suggestions to keep it light by skipping the oil and sticking to one super-fatty ingredient per meal. Another great thing we use when we don’t want all the oil is Olive Oil Spray. It’s zero-calorie, and it even works great with pans that aren’t non-stick. Happy 2013!

  2. This looks great, I’ve been having kale/ spinach, tomatoes, mushrooms and eggs with no toast and it keeps me going all morning! Also just bought myself a good non stick pan and totally agree, no need for oil yay 🙂 x

  3. Mmmmm, 1 egg, 1 sausage, more tomato, one toast. It’s difficult for me to eat heavy breakfasts. Have you tried any of the ceramic pans yet? Supposed to be non-stick without the Teflon.

  4. Thanks for stopping by earlier. Had to return the favor. I actually make this breakfast pretty often but without the sausages. I think I’ll give this a try next time. Can’t go wrong with those yummy sausage drippings intertwining with tomatoes and spinach.
