As if it has been three years since the birth of Homemade with Mess… doesn’t time just fry when you’re having fun! And as with most birthdays… the older you get the easier they are to forget, and if I’m honest I had no idea until I was politely reminded by WordPress this morning. So, I am officially ill prepared for this and have no party food or exciting cake recipes to share with you; instead I am going to drag out my birthday celebrations and kick things off with this delicious stuffed mushroom starter, as what better way to celebrate your Birthday than with a delicious 3 course meal and bottled of bubbly – so watch this space for more birthday celebrations to come!
Serves 4 as a starter or 2 as a main
- 4 large flat mushrooms – core removed and chopped
- 2 garlic cloves – peeled and finely chopped
- 2 tbsp olive oil
For the filling
- 4 good quality pork sausages – skin removed
- 1 small onion – peeled finely chopped
- 1 slice of white bread – whizzed into breadcrumbs
- 1 leek – sliced
- Black pepper
- 1 tsp oregano
- 1 egg – beaten
- 1 tbsp cream cheese
- Parmesan – to serve
Preheat the oven to 180’C
Mix the garlic with the olive oil and brush over the mushrooms (saving a little oil for frying the filling)
Bake in the oven for 15 minutes
Heat the remaining garlic oil in a pan and cook the onion until soft.
Add the leek to the pan and fry off for 2 minutes before stirring in the sausage – mashing it as it cooks.
Once the sausage has cooked through, mix it together with the pepper, oregano, egg and cream cheese.
Divide the mixture up between the mushrooms and then top with the parmesan cheese.
Return to the oven for 15-20 minutes and serve with a plate full of salad.
