Pan Fried Sausage Medley with a Tomato and Mascarpone Sauce

Sometimes I really struggle with naming my recipes, all too often I just chuck a load of ingredients in a pan and hope for a miracle. This was one of those occasions, and boy did the randomness pay off! I love sausages, and there is so much more to them than a match for mash potato or a butty, and this recipe proves that. It may not have an inspiring name but it will definitely inspire you to think differently about beautiful bangers and try something new, because sausages officially rock!

Serves 2

For the sausage medley

  • 165g cauliflower – broken into florets
  • 125g broccoli – broken into florets
  • 75g cabbage -finely sliced
  • 1 onion – finely sliced
  • 2 tbsp olive oil
  • ½ tsp chilli flakes
  • Salt and pepper
  • 4 good quality sausage

For the tomato and mascarpone sauce

  • Splash oil
  • 1 400g tin plum tomatoes
  • ½ tsp chilli flakes
  • 1 clove garlic – peeled and finely chopped
  • 2 stalks celery – finely chopped
  • 1 tsp paprika
  • 1 tbsp red wine vinegar
  • 1 tbsp mascarpone

To make the sauce, heat the oil in a large saucepan and gently fry the onion for 5-7 minutes, until soft.

Add the garlic, chilli flakes, celery and paprika and fry for another 5 minutes.

Add the vinegar and simmer for a minutes before adding the tomatoes to the pan – crushing them slightly.

Leave the tomatoes to simmer while you cook your salad mixture.

Steam the cauli, broccoli and cabbage for 5 minutes to soften

Heat the oil in a large frying pan and fry the onion and the sausages until the sausages have browned.

Remove the sausages from the pan – slice up and then return to the pan, along with the steamed vegetables and the chilli.

Fry off for 5 minutes to crisp up.

While your veg is cooking, blend the tomato mixture until smooth and then return to a low heat.

Stir in the mascarpone and season to taste.

Plate up your salad and smother in sauce – if you have any sauce leftover this is great stirred into pasta.
