Cheesy chips with garlic mayo has to be one of life’s great inventions, and with sweet potatoes it just gets better and better. When I was at 6th form this was my staple drinking diet; Rock City every Thursday night followed by an over-flowing tray of naughtiness. We even (shamefully so) got incredible excited on holiday in Ibiza when we discovered a board outside a bar with ‘cheesy chips & garlic mayo’, this place then became our home for the remaining week. If you, are also a loaded chip fanatic then you must try this with sweet potatoes, it really is a party on your plate!
For the wedges
- 2 large sweet potatoes – cut into wedges
- 1 tsp smoked paprika
- 1 tsp oregano
- 2 tbsp olive oil
- Salt and pepper
- Strong cheddar or mozzarella – grated
For the garlic mayo
- 2 tbsp light mayonnaise
- 1 clove garlic – crushed and finely chopped
- Juice ½ lemon
- 2 tbsp crème fresh
- 1 tbsp chopped chives
Pre-heat the oven to 200’C
Toss the potatoes in the paprika, oregano and salt and pepper and then mix in the olive oil
Make sure the wedges are in an oven proof dish, skin side down and place in the oven and bake for 40-50 until cooked through with crispy edges.
Once the potatoes are cooked, top with the cheese and place under a grill to melt
Mix together all the ingredients for the garlic mayo and enjoy a good dunk!
