Smokey Bacon & Gorgonzola Puff Pastry Tart, with Caramelised Leeks, Apple and Walnuts

Wow what a mouthful this is, not  just in the pronouncing sense but also in the eating. I have to say (and it goes against everything I believe in), but cheating with ready rolled puff pastry is genious! Especially when you are home late, have had a busy day at work and still want a delicious home-cooked meal – this pastry makes that so easy, and this dinner took no longer than half an hour from start to finish (which includes 10 minutes to pour a glass of wine and set up your week night movie watch).

Serves 4

  • 375g ready rolled light puff pastry
  • 1 egg yolk
  • 1 white onion – finely sliced
  • 2 leeks – finely sliced
  • 1 tbsp olive oil
  • 150g smokey bacon – roughly chopped
  • 1 tbsp white wine vinegar
  • 50g butter
  • 1 pink lady apple (or similar) – de-cored and sliced
  • 30g feta cheese
  • 85g Gorgonzola
  • Handful chopped walnuts

Preheat the oven to 180’C

Unroll your sheet of pastry and lay out onto a baking tray (keeping it on the greaseproof paper)

Brush with the egg yolk and bake in the oven for 15 minutes.

While the pastry is baking, cook the other ingredients by heating the oil in a large frying pan.

Fry the onion for a few minutes until soft and then add the bacon and the leeks.

Cook the mixture for 10-15 minutes, stirring regularly until the leaks are soft and the bacon coloured.

Add the vinegar and sweat off for a few minutes before stirring in the butter to complete.

Once the pastry is cooked, remove from the oven and spread over the leek and bacon mix.

Scatter over the apple, walnut and cheeses and return to the oven for an additional 10-12 minutes.

Remove from the oven, slice up and serve with heaps of salad and new potatoes.
