Chilli Sausage, Feta and Lentil Bake

I seem to be on it with one pot dinners at the moment. These cold and dark nights just scream out for oven cooked food, and I for one am loving it! Nothing beats a warming, rich baked dish; especially one that involves sausages and feta cheese. You may remember from a previous post that I made my own sausages, and this recipe included the last of my chilli cheesy batch. If you haven’t made your own sausages then fear not, I find the supermarkets nowadays have a great selection, so you should be able to pick up some sort of chilli sausage of chorizo that would make a fine substitute – meaning that everyone can enjoy this dish!

Serves 2

  • 1 tbsp olive oil
  • 1 medium potato – peeled and cut into 1cm pieces
  • 4 chunky chilli cheese sausages (I used homemade but you can substitute for a good quality supermarket sausage)
  • 4 plum tomatoes – roughly chopped
  • 1 onion – roughly chopped
  • 15 black olives – roughly chopped
  • 7 sundried tomatoes – roughly chopped
  • 75g feta cheese – roughly chopped
  • 390g tin green lentils – drained and washed
  • Salt and pepper
  • Rocket and salad leaves to taste.

Preheat the oven to 180’C

Toss the potatoes and sausages in the oil and bake in the oven for 20 minutes

Add the tomatoes and the onion to the pan and bake for another 20 minutes

Chop the sausages into chunks and stir in the remaining ingredients and put in the oven for a final 10 minutes

Season to taste and serve with fresh leaves and rocket
