I always thought that buying pre-made puff pastry was a cheat, that was until I tried it and realised how quick and easy it is! I have made puff pastry a few times and although it’s delicious, it is pretty time consuming and rather technical, so for a mid-week quick and easy meal fix then the pre-made sheets are a lifesaver! All you need to do it get it out the packet, roll it onto a tray and then top with whatever tickles your fancy. You all know how much I love chorizo, cheese and anything tomato based, so the combination of all of these for me is perfection! If you are just making this for one then save the other half and have it cold in your lunchbox.
Serves 2
- 5 shallots – quartered
- 50g spicy chorizo – finely chopped
- 5 sundried tomatoes – finely chopped
- 7 black olives – roughly chopped
- 10” x 6” sheet light puff pastry
- Cream cheese
- 1 tsp capers
- 2 tbsp tomato puree
- Parmesan and rocket to serve
Preheat the oven to 180’C
Roll out your puff pastry onto a lined baking tray
Spread the tomato paste over the base and then scatter over the shallots, chorizo, tomatoes, olives and capers
Take small tea spoons of the cream cheese and dollop evenly over the toppings
Bake in the oven for 25-30 minutes
Remove from the oven and scatter over rocket and parmesan before slicing in half and serving.

Puff pastry saves my ass on many occasions. I don’t even roll it out. I have the perfect size baking dish for the puff pastry! Your recipe looks great, kind of like a cross between a pastry and a pizza. Love it.
