Mediterranean Chorizo Puff Pastry Bake

I always thought that buying pre-made puff pastry was a cheat, that was until I tried it and realised how quick and easy it is! I have made puff pastry a few times and although it’s delicious, it is pretty time consuming and rather technical, so for a mid-week quick and easy meal fix then the pre-made sheets are a lifesaver! All you need to do it get it out the packet, roll it onto a tray and then top with whatever tickles your fancy. You all know how much I love chorizo, cheese and anything tomato based, so the combination of all of these for me is perfection! If you are just making this for one then save the other half and have it cold in your lunchbox.

  1. Puff pastry saves my ass on many occasions. I don’t even roll it out. I have the perfect size baking dish for the puff pastry! Your recipe looks great, kind of like a cross between a pastry and a pizza. Love it.
