It may be coming towards the end of summer but it’s still not too late to light that barbecue one last time and enjoy these awesome lamb kebabs alfresco style. They are however still delicious cooked indoors, so fear not if the heavens open. The other great thing about kebabs is you can make them what you want them to be and enjoy them in so many different ways. We had ours with some roasted veg, heaps of salad, corn and hummus; but you can also devour them with chips, stir into couscous or snack on them in a pita bread with a dollop of tzatziki. However you decide to eat these, I promise you won’t be disappointed.
- Handful mint leaves – finely chopped
- 1 clove garlic – crushed and finely chopped
- 1 tbsp mango chutney
- ¼ tsp cinnamon
- 1 tsp cumin
- Pinch salt
- 2 tbsp natural yoghurt
- 3 lamb steaks – cubed
- 6 kebab skewers
Mix together the marinade and coat the lamb in it. Leave it to marinade for at least 2 hours, but overnight ideally.
Thread the lamb onto the skewers and heat a grill, barbecue or griddle pan to a medium-high temperature.
Cook for 10-15 until lightly charged and serve with whatever you fancy
