Citrus Barbecue Chicken Kebabs

Setting aside the wicked flavours; the best thing about kebabs are that they are cheap to make, super easy and uber healthy. We made these as an addition to a ridiculous amount of barbecue food but if you’re just cooking a meal for two then one breast would still suffice, as you can pack your kebab skewers with plenty of vegetables and then serve with heaps of salad – summery, healthy and totally delicious! As with my previous barbecue burger recipe, we had plenty of leftovers here (I just love to feed), so my next blog post will give you a delicious recipe should you too make too much barbecue food.


Serves 4 with salad and sides

–          2 chicken breasts – cubed

–          1 clove garlic – minced

–          1 thumbsize piece ginger – minced

–          Juice of 1 lemon and 1 lime

–          Selection of herbs (Thyme, Marjoram & Tarragon) – finely chopped

–           8 kebab skewers

–          1 courgette – cubed

–          1 onion – quartered and broken apart

Mix together the chicken, garlic, ginger, citrus juice and herbs and leave to marinate for an hour or so

Thread the chicken, courgette and onion onto your kebab skewers

Cook on a barbecue or grill until lovely and golden and cooked through

Serve with heaps of yummy salad (and the odd burger)
