For anyone that hasn’t done much baking and finds the prospect a little too much effort, flapjack is a great place to start. You simply melt some ingredients, stir it into some dry ingredients and compact it into a tin to bake – now where’s the effort in that? Once you get the satisfaction of eating your homemade treat I swear you will have to bug to bake more and more. I love flapjack, and although it’s full of butter, sugar and sticky golden syrup, it doesn’t feel as guilty as cake; but don’t let it fool you – its lying. This flapjack is pretty naughty and indulgent, and it lasted all of 2 days in our house – oooops!
– 125g salted butter
– 125g soft dark brown sugar
– 3 tbsp golden syrup
– 200g rolled oats
– 100g raisins
– 50g dark chocolate – melted
– Handful sesame seeds
Preheat the oven to 180’C
Melt the butter sugar and the syrup in a saucepan and stir until combined.
Pour the liquid into a bowl with the oats and the raisins and give it a good stir
Grease and line a 20cm square tin and tip the oats into it.
Press the mixture flat with the back of a wooden spoon until compact and then bake in the oven for 25 minutes.
Leave to cool for 10 minutes in the tin a then slice and cool completely on a rack.
Drizzle over the melted chocolate and the sprinkle the sesame seeds over the top.
Leave to cool before eating.

I’m not a fan of raisins but this looks interesting. Kind of like some weird sesame brownies or something. Like Halvah.

In the US a flapjack is like a pancake. But these are more scone-ish? Whatever they are, they look marvelous!!!
