Halloumi, Mixed Bean and Avocado Wraps

So after my celebration blog yesterday I am now back to the real stuff, and what homemade with mess is all about; food glorious food! This recipe includes two of my most favourite ingredients in the World, Halloumi and Wraps; and when you have those two together you just know it is going to be a great eat. There are many great things about wraps; they are quick and easy to make, taste delicious and are so so versatile. Not only can you fill them with pretty much any flavour combination, but you can also enjoy them for breakfast, lunch and dinner. At work one of our most popular breakfast items is a bacon, sausage, hash brown and bean wrap and I will always chose them over a sandwich at lunch; not only that but you can then still enjoy them for dinner with some salad and chips or spicy rice. I recon I could live off a diet off wraps; and these beauties would be right at the top of my list!

Serves 2

–          1 avocado – peeled and stoned

–          1 red chilli – finely chopped

–          Juice ½ lime

–          2 tbsp mayonnaise

–          200g tin mixed salad beans – drained

–          ½ courgette – peeled into ribbons with a vegetable peeler

–          Juice ½ lime

–          1 tsp fresh mint – finely chopped

–          2 tsp rice wine vinegar

–          125g halloumi – sliced

–          2 x chilli wraps

Serves 2

Mash the avocado in a bowl and stir in the chilli, half a lime juice and mayonnaise

In another bowl, mix together the courgette ribbons, juice ½ lime, mixed beans, mint and rice wine vinegar

Heat a griddle pan to a high temperature and cook the halloumi for a minute or two on each side, until chargrilled.

Heat the wraps (according to the pack instructions) and then divide and spread the avocado mayo, top with the halloumi and finish off with the bean salad.

Roll up the wrap, tucking the sides in as you go and enjoy. You may find that you don’t use all the bean salad, so toss this together with some mixed leaves and serve on the side – it is also quite nice just enjoyed with a fork!

  1. Prathiba I had to Google this myself. According to Wikipedia “semi-hard, unripened brined cheese made from a mixture of goat’s and sheep’s milk, and sometimes also cow’s milk. It has a high melting point and so can easily be fried or grilled.”

    Sounds delicious!
