Pork, Ginger and Apricot Burgers, in Toasted Pita’s with Tzatziki and Feta Cheese Salad

This is perhaps one of the tastiest and healthiest burger recipes that I have ever discovered. I used to make these burgers a lot at university; they originally came from the book ‘101 Cheap Eats’ (a student absolute must), but over the years I have adapted them slightly and made them my own. I made these for a friend that came for dinner, as they are the perfect dish to cook for friends. You can prep everything in advance and then the burgers just need sticking in the oven your friends arrive. Not only that but these burgers are fun, tasty and look pretty impressive too. I officially cannot wait until the summer as these bad boys will be a must to cook on the first of the summer barbecues!

Serves 3 (makes 6 mini burgers)

For the burgers

–          1 small white onion – finely chopped

–          Splash olive oil

–          1 green chilli – finely chopped

–          1 inch piece ginger – finely chopped

–          75g apricots – finely chopped

–          450g pork mince

–          1 egg

–          Salt and pepper

For the tzatziki

–          Handful mint – finely chopped

–          Handful coriander – roughly chopped

–          60g cucumber – finely chopped

–          Juice ½ lime

–          Pinch sugar

–          3-4 heap tbsp. natural yoghurt

To serve

–          3 large pita breads – toasted

–          Mixed leaves

–          Tomatoes

–          Feta cheese – crumbled

To make the burger, heat the oil in a frying pan and fry the onions until soft

Add the chilli and garlic and fry off for 3 minutes

Mix together all the ingredients for the burgers and divide the mixture into 6

Shape into balls and then flatten into burger shapes

Chill in the fridge for half an hour to firm up

In the meantime make the tzatziki by simply mixing the ingredients together

Pre heat the oven to 180’C

Bake the burgers for half an hour and then heat a griddle pan and fry for a minute or so on each side to crisp up the edges

Cut the toasted pitas in half and fill with the salad, feta cheese, tzatziki and ofcorse the burgers. You will have plenty of extra salad and dip so make sure you fill your plates with what is left over.

  1. These sound gorgeous. I tried to make something similar with mango a while back and found as they cooked the mango just kind of melted and ran out and stuck to the bottom of the tray. I had put everything in the mixer so I might try again just by chopping and mixing by hand.
