Creamy Christmas Bake – Cauliflower, Broccoli, Brussels, Bacon and Sausages in a Creamy, Cheesy Sauce

Ok, so this may be a mess on a plate, but it is one very festive and tasty mess on a plate. This is perfect for your left over Christmas dinner; it would also be lovely with some roast turkey (or chicken if you live in my house). Seriously, chuck all your leftovers in a pan, cover in a cream sauce and cheese and you are onto a winner. This recipe is officially the new and improved bubble and squeak!

–          250g of broccoli and cauliflower florets

–          1 tbsp olive oil

–          6 brussell sprouts – sliced

–          1 red onion – sliced

–          4 rashes of smoked bacon – chopped

–          2 sausages – roughly chopped

–          6 kale leaves – stalks removed and roughly chopped

–          2 dsp corn flour

–          ¾ pint semi skimmed milk

–          75-100g strong cheddar cheese – grated

–          Salt and pepper

Preheat the oven to 180’C

Steam the broccoli and cauliflower for ten minutes

In a frying pan, heat the oil and fry the onion.

Once softened add the bacon, sausages and brussell sprouts

Cook until the bacon is crispy and the sausages have browned

In the meantime, heat the milk in a saucepan until steaming

Stir the flour with a splash of water to make a paste, add to the milk and stir continuously until thickened

Add two third of the cheese, remove from the heat and stir until melted.

Season with salt and pepper

Combine all the ingredients together and transfer to an oven proof dish

Top with the remaining cheese and a good twist of pepper and bake in the oven for half an hour

Once the topping is golden and crispy, remove from the oven and enjoy 😀

  1. Made this over the weekend and it was a huge hit, even with my son. I wasn’t sure he’d like it but he said it was a winner. Loved that I was able to use all the veggies in my fridge in this one dish.
