Thai Spiced Squash and Coconut Soup

I don’t know if anyone has seen the Heinz tomato soup advert, the one where the woman is battling the wind, cold and rain of winter and then it shows her all snug and warm with a steaming mug of tomato soup. I am usually quite unobservant of adverts, but this one made me really crave what was in that bowl. I am the biggest sucker of Heinz tomato soup, and I have even made a pretty good version of it myself (check it out here); but when there are no tomatoes in the house then one must look for other satisfying alternatives, and I was so happy to come up with this one. It was seasonal, warming, creamy, slightly spicy and had a really great Thai tang! If you too are sucked in by the powers that be and crave that steamed up glasses moment, then give this a try. You might be surprised to find it even better than Heinz!

Serves 3-4

–          1 medium butternut squash – peeled, deseeded and cut into wedges

–          1 tbsp soy sauce

–          1 tbsp corn oil

–          1 red chilli

–          2 stalks lemon grass – peeled and sliced

–          25g ginger – finely chopped

–          2 cloves garlic – crushed

–          350ml chicken stock

–          2 tsp Thai green curry paste (check out my recipe for a home made paste)

–          400ml coconut milk

–          2 tbsp fish sauce

–          2 tbsp tomato ketchup

–          1 ½ limes – juice only

Preheat the oven to 200’C

Toss the squash in the oil and the soy sauce and roast for half an hour until cooked

Heat a little oil in a large saucepan and lightly fry the chilli, lemon grass, ginger and garlic for 2 minutes

Add the curry pasta and fry for another 2 minutes

Add the squash to the pan and stir in the stock, 2 tbsp of the coconut powder, the fish sauce and the ketchup.

Cover and cook for ten minutes

Try to remove as much of the lemongrass stalks as possible and then blend into a smooth consistency

Return to a gentle heat and stir in the remaining coconut milk, lemon juice and a good twist of seasoning

Once heated through ladle into bowls and enjoy hot

  1. I love homemade tomato soup and have a recipe for one that puts Heinz to shame. This Spiced Squash soup looks delicious too, and it is so cold here now that I will have to make it. I love soup.
