Assorted Quick and Easy Tortilla Pizzas

You will have seen that yesterday I posted a yummy sausage wrap recipe and as very few packs of wraps come in two’s in means that we always have wraps left over. This is not a bad thing, as wraps have multiple uses and do not simply have to be used to ‘wrap’, demonstrated by todays post. You all know I also have a love for pizza’s and as I had wraps to use up and no time to make pizza dough I thought I would give them a go as an alternative, and I have to say they were super! You have all the flavours of a pizza with a healthier and thinner dough, so they are also better for the waste-line (until you smother them in cheese that is.) I made two of these for dinner, a roasted vegetable with feta cheese, and a caramelised onion with goat’s cheese and we shared them both with some fresh crunchy salad. It was an awesome dinner and one which I cannot recommend enough, especially for the homemade pizza lovers that don’t always have the time to dough it up themselves!


Each pizza serves 1

For the Roasted Vegetable and Feta Cheese Pizza

–          1 red pepper – cut into square chunks

–          1 small courgette – finely sliced

–          1 tbsp olive oil

–          1 x 400g tomatoes

–          2 cloves of garlic – crushed

–          2 tbsp spoons tomato puree

–          1 dsp Worcester sauce

–          1 tsp sugar

–          1 tsp oregano

–          1 large tortilla wrap

–          Feta cheese – crumbled (quantity dependent on taste and diet, I say the more the better)

Pre heat the oven to 200’C

Toss the peppers and the courgette in the oil and roast for 20 minutes

To make the sauce, gently fry the garlic in a little bit of oil until golden

Add all the other ingredients, bring to the boil and then simmer for 10 minutes.

Blend ingredients and season to taste.

Place the wrap on an oven tray, ideally a pizza stone or the like

Spread 3 tbsp of the sauce onto the wrap and spread out evenly (the remaining sauce can be used for pasta, stews, soup, a bolognaise or more pizza’s – it has lots of uses)

Top with the roasted veg and crumble on your feta and then bake in the oven for ten minutes


For the Caramelised Onion and Goats Cheese Pizza

–          2 red onions – finely sliced

–          1 tbso olive oil

–          3 tbsp balsamic vinegar

–          3 tbsp sugar

–          Soft goats cheese – crumbled (quantity dependent on taste and diet, I say the more the better)

Heat the oil in a frying pan until hot and then fry the onions for 3-4 minutes until softened.

Add the balsamic and the sugar, bring to the boil and then simmer on a medium heat for 10-15 minutes until the onions are really soft and sticky

Place the wrap on an oven tray and smother in the onions, followed by the goat’s cheese

Roast in a preheated 180’C oven for ten minutes

  1. These look lovely. We had homemade pizza tonight too – used shop bought puff pastry, put on a homemade pizza sauce, courgette, red onion, salami and mozzerella, it was good. Might put it on my blog tomorrow anyway lol. Going to try wrap pizza next time we have spare wraps xx
