It has been a long time since I have posted a wrap recipe so it may not be too obvious that they are one of my major food addictions. You also may not know that I have at least three wraps a week, but this is at work so I manage to keep it well hidden. Where I work have an on-line deli ordering service, where if I am honest there is not a vast selection of fillings and they are not particularly adventurous or exciting, so I do often crave them at home too. This combination, I have to say, is particularly delicious (modesty is not my forte). I have mentioned before that it is mine and Sam’s dream to open our own café and this recipe will most certainly be on the menu. It is zingy, spicy, and full of rich sausagy flavours; and let’s face it who can go wrong with an awesome wrap!
Makes 4 wraps
For the spicy sausage and bean mix
– 4 sausages
– 1 tbsp olive oil
– 1 red onion – finely sliced
– 1 small courgette – finely chopped
– 1 red pepper – cut into thin strips
– 1 green chilli – finely chopped
– 1 garlic clove – minced
– 1 x 300g tin mixed beans
– 2 tbsp Worcester sauce
– 1 tbsp tomato ketchup
– 1 tbsp bbq sauce
– 1 tsp chilli sauce
– 1 tsp paprika
To assemble the wraps
– Juice 1/3 lime
– 1 small clove garlic
– 1 large handful coriander
– 2 tbsp mayonnaise
– 4 x wraps
– 120g feta cheese – crumbled
– Mixed leaves
– Thin slices cucumber
To make the spicy sausages, heat the oil in a hot frying pan and cook the sausages, turning regularly, until they are brown all over.
Remove the sausages from the pan and add the onions to fry until softened.
While the onions are cooking, slice the sausages diagonally so they are about 1cm thick
Once the onions are cooked, add the remaining veg and the sausages to the pan and fry off for 4-5 minutes until they soften slightly.
Add the remaining ingredients, bring to the boil and then reduce to simmer for 5-7 minutes, stirring regularly and then season to taste
In the meantime, mix together the mayo, garlic, coriander and lime juice and heat the wraps for 20 seconds in a microwave
To assemble the wraps, spread the mayo mix on the bottom and then divide the sausage mix between them. If you keep the filling to a rectangular strip down the middle it makes them easier to roll.
Plate the feta cheese on top and then finish off with the crunchy salad
Roll up the wraps and serve with extra salad on the side.
If you want a nice salad dressing then take a teaspoon of the mayo mixture and whisk it with 1 tsp of extra virgin olive oil, 1 tsp of white wine vinegar and another 1/3 of a lime juice.
