Tomato Sausage Meatball Bake

This has to be one of those recipes that simply fills you with comfort and joy. I had a massive grin on my face the whole way through eating this; well until I got near the end that is. Does anybody else slow down when they are coming to their last few mouthfuls just to make the food last that little bit longer? I always think it is just me but surely there must be others out there that do it. Anyway, an awesome pasta bake is my absolute guilty pleasure and usually co-insides with a Sunday evening and a hangover. I can’t recommend these meatballs enough either, you take what Is quite a small amount of sausage meat and bulk it out with really great coupling flavours so you get a lot more meat for your buck! I promise, this is one meal that will have you smiling from ear to ear!

Serves 3

For the meatballs

–          1 red onion – finely chopped

–          1 tbsp olive oil

–          1 slice of bread – lightly toasted and blitzed into breadcrumbs

–          1 tomato – roughly chopped

–          3 sundried tomatoes – roughly chopped

–          1 tsp tomato puree

–          200g sausage meat

–          1 egg – beaten

–          Salt and pepper

For the pasta bake

–          1 red and one yellow pepper – roughly chopped

–          2 tbsp oil

–          1 red onion – finely sliced

–          ½ tbsp. red wine vinegar

–          1 tbsp Worcestershire sauce

–          1 x 400g tin chopped tomatoes

–          Pinch sugar

–          1 tbsp tomato puree

–          Pinch oregano

–          200g pasta – cooked according to the pack instructions

–          Handful fresh mozzarella – torn

To make the meatballs, gently fry the onions in the oil until soft and then blitz the onion in a blender with the tomato, sundried tomatoes and tomato puree

Stir together the onion mix, breadcrumbs, sausage meat, salt and pepper and the egg until well combined and the shape into meatballs the size of a Ping-Pong ball.

Leave the meatballs to chill for at least 15 minutes so that they firm up a little

Preheat the oven to 180’C

Put 1 tbsp oil into an oven proof dish, roll the meatballs in this and scatter on the peppers

Roast in the oven for 20 minutes

In the meantime cook the pasta and make the sauce by frying the onion in the remaining oil until soft before adding the tomatoes, Worcestershire sauce, vinegar, puree, sugar and herbs and leaving to simmer over a low heat until the meatballs and peppers are cooked.

Once all the elements are cooked, stir until well combined and then scatter the mozzarella on top

Bake in the oven for 20-25 minutes until the mozzarella has turned golden and crispy
