And so the sunshine continues, can you actually believe it!!?? Having a park as your back garden is great but I do still crave for my own outside space, I think we would be cooking outside every day if I could. I can’t grumble though; the park is lovely, especially when the sun shines. It’s full of people playing, sunbathing, picnicking and generally enjoying the beautiful sunshine. We had an amazing barbecue last weekend and these chicken wings were a great addition to it; just make sure you have lots of baby wipes for your fingers, as they are deliciously sticky and guaranteed to make a mess!
Makes 12 chicken wings
– Juice 1 orange
– 1 clove garlic – minced
– 1 tbsp sesame oil
– 2 tbsp soy sauce
– ½ tsp five spice
– 1 star anise
– ½ tbsp lemon juice
– ½ tbs balsamic vinegar
– 2 tbsp sugar
– 1 tbsp mango chutney
– 12 chicken wings
Heat the sesame oil in a frying pan and gently fry the garlic until it starts to brown a little.
Add the remaining ingredients to the pan (except for the chicken) and bring to the boil.
Reduce to a medium to high temperature so the mixture is still bubbling away but not too violently.
Leave to bubble for 7-8 minutes, until the sauce has thickened and become sticky
Remove from the heat and coat the chicken wings in the mixture
Leave to marinate for as long as possible, ideally overnight.
Cook on the BBQ and enjoy 😀
