Do you want to know something quite depressing?! Whenever I hear or see Teriyaki chicken I think of Subway, and if I’m honest, until I made this dish the only Teriyaki chicken I had eaten was at Subway. Before I went to Uni I worked in town and had a total addiction to Subway’s Teriyaki chicken, and I would always have it on Italian herb and cheese bread and with southwest sauce, plus all the extras. I have to say it has now been some time since I have had a Subway but this recipe was a great replacement; infact I would go as far to say it is way better better! So whether you want to eat this recipe in a sandwich or with these noodles, I promise you may never take a trip to Subway again (unless your favourite filling is meatballs that is).
Serves 2
For the Chicken
– 4 chicken goujons – sliced
– 1 tsp hot chilli sauce
– 2 tbsp honey
– 1 tbsp sesame oil
– 2 tbsp soy sauce
– 2 tbsp orange juice
For the Noodles
– 1 tbsp sesame oil
– 1 chilli – finely chopped
– 1 garlic clove – finely chopped
– Juice of 1 lemon
– 1 tsp chilli Sauce
– 1 tsp honey
– 1 green pepper – finely sliced
– 1 red onion – finely sliced
– ½ carrot – finely sliced
– 1 tbsp sesame oil
– 100g dried rice noodles – cooked according to the pack instructions
– Small nob of butter
Mix together all the ingredients for the chicken and marinate for 20-30 minutes
For the noodles mix together the lemon juice, chilli sauce and honey
Heat the sesame oil in a wok and fry the onion, pepper and carrot for 3-4 minutes
Add the chilli and garlic and fry off for a minute and then add the lemon juice mixture and the noodles
Stir well and fry off for 2-3 minutes until everything is cooked through.
In the meantime, heat a separate frying pan with a little oil. Remove the chicken from the marinade and fry for 2-3 minutes
Add the marinade and leave to bubble for around 3 minutes until the sauce has thickened
Plate up the noodles and top with the chicken, drizzle with the teriyaki sauce and enjoy

lol. I have to admit, I never tried Teriyaki at Subway because I couldn’t imagine that it would be any good. I do have a weakness for their meatballs but I can make meatballs just as good, if not better.
Your teriyaki looks good and a little sesame seeds would be a nice addition too.
