Flaked Salmon Wrap with Sweet & Sour Tomatoes and Celeriac Slaw

As promised, here is a great recipe that takes advantage of the celeriac slaw blog from yesterday. I love wraps and I do often go for quite random combinations, infact people often think I’m quite weird when I talk about the food I like. When I was a young, my Mum always make me cheese and raisin sandwiches for my packed lunch and everyone laughed at this; that was until those who dared tried it and realised that the combination was actually pretty awesome (try it if you don’t believe me)! Another sandwich combination I love is peanut butter, marmite and cheese. This combination is a little more difficult to convince people of, but a great start is simply peanut butter and marmite on toast (I have managed to convert several people of this one). Whether you like to play it safe or take a risk, this flavour combination could be a new experience that you might end up really enjoying 😀

For the Salmon

–          1 salmon steak

–          Splash Olive Oil

–          Salt and Pepper

For the Sweet & Sour Tomatoes

–          10 cherry tomatoes – halved

–          3 tsp brown sugar

–          3 tsp red wine vinegar

–          Splash olive oil

For the wrap

–          1 large tortilla wrap

–          Rocket

–          Good helping of the celeriac, apple and wasabi slaw from yesterday’s recipe.

Serves 1

Preheat the oven to 180’C

Season the salmon and place it skin side down on a lightly oiled baking sheet. Depending on the size of the steak, bake for 12-15 minutes until cooked all the way through

To make the tomatoes, fry them in the olive oil, vinegar and sugar for 2 minutes and then place in the oven for 5 minutes. They should turn a lovely deep colour and be really sticky.

Make the wrap by flaking the salmon and placing it down the centre or the wrap along with the tomatoes, slaw and rocket. You can either simply roll it or tuck the top ends in first and the roll the main body around the wrap to make a parcel.
