So I have returned from the land of Muse and markets with nothing other than…. A Chinese chicken recipe!!?? Ok, I have been so busy since my return from Hamburg that this is a case of ‘here’s one I prepared earlier!’ I had the best trip though, and I am now an engaged woman; as my wonderful Sam asked me to marry him and I was ecstatic to say yes. Be prepared for lots of wedding gushiness and multiply attempts at cakes!
So back to the food, this is an alternative recipe for your cold meat Christmas buffet table (or a delicious meal of its own). This recipe really brings out the best of a chicken; it’s succulent, juicy and so incredible tasty! It was another meat (along with my roast ham recipe) that made it to my Christmas party buffet table and was devoured in minutes. It really is a must try!
– 1.5kg whole chicken
– 2tbsp soy sauce
– 1tbsp honey
– 1tsp five spice
– Sesame oil
– 1 large clove garlic – crushed
– 1 thumbsize piece ginger – grated
– 1 lemon – halved
– 2 red chilli’s – halved
– 1 thumbsize piece ginger – sliced
– 3 cloves garlic – left whole
– 1 carrot – peeled and roughly sliced
– 3 small onions – halved
Stuff the inside of the chicken with ½ the lemon, ½ an onion, 1 of the chillis, the sliced ginger and 1 of the chilli’s
Line a baking tray with the other half of the lemon, chilli, carrot and the remainder of the onions and sit the chicken on top
Mix together the Soy sauce, honey, crushed garlic, crushed ginger and five spice.
Make small cuts in the skin of the chicken, just at the top of each breast and with push your finger down inside the skin so it comes away from the breast and stuff the filling inside using 2/3of the sticky spice mix. Do the same with the legs and the remaining mixture.
Cover with foil and stick in the fridge to marinate for at least 2 hours (I left mine overnight)
Preheat the oven to 190’C
Rub the chicken skin all over with the sesame oil and salt and pepper, re-cover with foil and place in the oven.
Roast in the oven for 1 hour and then remove the foil. Cook for a further 20-30 minutes until the skin is lovely and crispy.
