Pan-Fried Salmon Fillet with New Potato Salad and Zingy Mini Shrimp Salsa

We are very lucky where we live that we have a fantastic fruit and vegetable shop just down the road. They sell the most amazing range of fresh local produce, and are now even starting to branch out with a local selection of cheeses and deli items. Every time I visit I leave feeling really excited about what I have purchased and also by how reasonable it is. If anyone if from or near Bristol then you have to check out Digin in Redfield, the staff are pretty great to. The vegetables I used in this are all from there and I swear they taste ten times better than the supermarket! All we need now is a great butchers and fishmongers to open up and we could be living in heaven!


Serves 2

For the Shrimp Salsa

–          ½ tbsp. olive oil

–          1 tps butter

–          1 shallot – very finely chopped

–          250ml white wine

–          1tbsp chopped fresh dill

–          1 tbsp chopped fresh parsley

–          Level tbsp chopped capers

–          150g small prawns or shrimps

–          Juice 1 lemon

–          1 heap tsp sugar

For the salad

–          12 New potatoes – cut to the same size and boiled in salty water until soft

–          Mix of fresh leaves

–          Crunchy radishes

For the salmon

–          2 salmon fillets – well seasoned with salt and pepper

–          Salt and pepper

–          ½ tbsp. olive oil

–          Small nob of butter

To make the salsa, gently sauté the onions in the butter and the oil until soft but not quite golden

Add the wine and simmer until reduced by half

Stir in the remainder of the ingredients and simmer for 3 minutes

Meanwhile, heat the oil in a frying pan until hot and then fry the salmon, skin down for 3 minutes or so until the skin is nice and crispy

Flip the salmon over onto the other side for 30 seconds to 1 minute (depending on the size) and add the nob of butter, making sure the salmon is well coated

Plate all your salad and potatoes, lay the salmon on top and then drizzle with the shrimps and the juice.

  1. Okay once again a must have to be made! I just this past week made your Spicy Meatballs with Oriental broth and it just was amazing!
