This is the most perfect side dish or snack, and who doesn’t love awesome chips! The chilli and garlic give the chips and amazing flavour and by frying and roasting them they become super crispy yet still fluffy and soft in the middle, just how I love them. The mayo is a great accompaniment too as the lime gives it a really fresh and edgy kick. This recipe is also very easy to make and is much more exciting than just plain mayonnaise. I have to admit that I did only use 2 small potatoes in the picture and I really could have done with some more, which is why I changed the recipe to 2 large potatoes (or three small). I also made extra mayo too so that it would fit in the bowl (plus I am addicted) but the recipe should be just what you need for a large portion for one. If you don’t absolutely love it then I will give you your money back*, which will not be very much as this is also a really cheap dish to make. Enjoy 😀
– 2 large potatoes – peeled and chopped into chips
– Corn oil
– 1 chilli – finely chopped
– 1 clove of garlic – crushed
– Freshly ground sea salt
– 1 heap tbsp. mayonnaise
– Juice of a lime
– 1 tsp chilli flakes
Heat the oven to 180’C
Heat ½cm corn oil on a high heat in a frying pan
Fry the chips until golden brown
Add the garlic and chilli and transfer the pan to the oven
Bake for 10 minutes, remove and transfer to a board and brush off the bits of garlic and chilli (obviously when the chips have cooled slightly)
To make the mayo simply mix together the mayo, lime and chilli flakes and use to dip the chips into it.
