Paprika Flaked Chicken, Sundried Tomato and Parmesan Salad

So, I am back from sunny Portugal and what better thing to make up for all the drink and amazing food of being on holiday than eating a salad. Not that I am saying we ate rubbish, we ate amazing food! The best meal we had involved some hot coals, a beach, fresh seabass and Thai spiced whiting. You really can’t get better than that! We found a small little cove on the beach, filled the rocks with tea lights, watch the amazing sunset and ate under the stars. It was possibly one of the best experiences of my life. The whole thing puts my return to home chicken to salad to shame. Not that I am knocking the salad, it tastes frigging awesome! Maybe just take it to eat on a beautiful park, pretty meadow or to watch the sunset over the ocean and it makes the whole experience of the meal out of this world. It is not quite the same in your flat, in front of the telly while you are trying to overcome your holiday blues.


–       1 chicken breast

–       1 tsp paprika

–       Juice ½ Lime

–       1 tsp of the oil from the sundried tomatoes (or olive oil if you don’t have that)

–       Handful pine nuts

–       Mixed salad leaves

–       3rd of a yellow pepper, finely sliced

–       5 sundried tomatoes, roughly chopped

–       Handful of parmesan flakes

–       Juice of ½ lime

–       ½ tsp red wine vinegar

–       Pinch of mixed herbs

–       2 tsp oil from the jar of sundried tomatoes

Pre heat the oven to 170’C

Smother the chicken in the paprika, lime juice and a sprinkle or salt and roast in the oven for 30-35 minutes. I roasted mine for 33 minutes and it was perfect, soft, succulent and juicy

In a bowl, mix together the salad leaves, pine nuts, sundried tomatoes, peppers and parmesan flakes

With a fork, wisk together the lime juice, red wine vinegar, herbs until to make a dressing

When the chicken is cooked, remove from the oven and leave to cool for 5 minutes. Bash with a rolling pin and then tear apart with your fingers. Mix into the salad and drizzle with the dressing.
