Summer Essential Side Dish No1: Coronation Potato Salad

We may not have seen too much of the summer in the UK this year but that does not mean we can’t make the most of the excellent summer food there is on offer. We are British; we have the determination to brace the cold, the wind and the rain and get outside to cook on coals, or sit on a woollen tartan rug with a wicker basket. This recipe, and my next couple are based on very simple classic recipes (with a bit of a twist) that are designed to be the perfect accompaniment to any BBQ or picnic. So get eating outside and make the most of the beautiful outdoors!

Just to note, these recipes will taste equally great indoors and can also be enjoyed all over the world.

–          500g new potatoes, washed and cut to the same size

–          2dsp light mayonnaise

–          1 tsp curry powder

–          1 tsp mango chutney

–          Handful of toasted almonds

–          Fresh coriander

Boil the potatoes in a pan of salted water for 15 minutes

Mix together the mayo, curry powder and chutney

Once cooked, drain and dry off the potatoes by putting back over a very low heat to let off the steam

Allow to cool and then stir in curried mayo and almonds.  Season to taste and top with chopped coriander.
