I have always bought sweet chill sauce in a jar from the supermarket because I thought this was not something that was easy to make at home but I was so wrong. It is quick, each and uses very few ingredients. I have to say I will never buy it again!
All you need is the same weight in sugar as the volume of water, for example I usually use;
– 100ml Water
– 100ml Caster Sugar
– 2 pinches of chili flakes (or more if you like it really hot!)
Combine all the ingredients in a saucepan and bring to the boil.
Turn to a medium heat for 10 or so minutes untill the mixture turns to a syrupy consistency
If you want to add a little bit more to it then perhaps squeeze in some lemon or lime or a bit of fish sauce to give it that Thai edge, easy peasy!
